Birthday cake recipe for a 1 year old?

0 votes

With the first birthday soon coming up, what do you think works as birthday cake? Do you have a good recipe or an idea?

While I see the fun of just letting her dive into a regular cake, I would prefer to keep it more in line with the kinds of things that she can eat currently, and not make it a sugarfest. Do you have ideas or recipes for how to have a cake and let her also eat it? :)

    YAY CAKE! YAY first birthdays. :)

    My son's birthday cake for years 1 and 2 came from a recipe on allrecipes.com "simple white cake". For year 2, I added a homemade strawberry frosting and was told by a friend to enter it in a baking contest. :)

    Since it was so simple even I had time to make it, I could use all organic ingredients, mixed half/half white and whole wheat flour, and used only 3/4 cup sugar. That made it feel healthier. This was also good for us as the recipe makes a smaller cake.

    It is simple but you have to follow the instructions carefully, ie when it says to cream things, make sure it's creamy. You should also add a bit of extra milk (~2TB - 1/4 cup extra) and I put a bit less vanilla or it can be a bit overpowering.

    Ingredients

    * 1 cup sugar
    * 1/2 cup butter
    * 2 eggs
    * 2 teaspoons vanilla extract
    * 1 1/2 cups all-purpose flour
    * 1 3/4 teaspoons baking powder
    * 1/2 cup milk

    Directions

    1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x9 inch pan or line a muffin pan with paper liners.
    2. In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan.
    3. Bake for 30 to 40 minutes in the preheated oven. For cupcakes, bake 20 to 25 minutes. Cake is done when it springs back to the touch.
